Pastry Chef Paul Trecroci Wows with Decadent Desserts

Treat Yourself to the Best Dessert in Madison, WI

Head Pastry Chef Paul Trecroci loves chocolate. His eyes light up when describing his favorite dessert — chocolate torte.

“It’s rich and simple. One perfect layer of dense dark chocolate, topped off with silky ganache,” Trecroci says.

The torte isn’t on The Edgewater’s dessert menu—yet. But, you can enjoy other dream-worthy desserts at The Statehouse, our flagship restaurant. Ask for a seat on our terrace and watch the sun go down over Lake Mendota as you enjoy our Pineapple Rum Upside Down Cake or Strawberry Panna Cotta with Lemon Sorbet. Or, try the Chocolate Bavarois — Chef Paul’s current favorite.

Chef Paul also offers comfort food desserts in The Boathouse, our lakeside restaurant. Try a slice of homemade pie, donut holes, or a chocolate chip cookie.

Chef Paul grew up Kenosha, Wisconsin, and has loved baking since he was a teenager. He enjoyed the challenge of learning to bake cakes, and decided to pursue baking full time. He moved to Chicago, where he attended culinary school at The Cooking and Hospitality Institute of Chicago.

Chef Paul practiced the pastry arts at some of Chicago’s best hotels and restaurants including The Ritz-Carlton, Marche and Bittersweet Bakery. At The Ritz-Carlton, Chef Paul excelled at making gingerbread houses — notable creations include a model of Chicago’s Skyline and a replica of Frank Lloyd Wright’s Fallingwater. Stay tuned for exciting news from Chef Paul around holidays at The Edgewater…we’re hoping a gingerbread display is on his list for Madison!

At home, Chef Paul relaxes by cooking with his wife, and walking their pugs in the park. He recently moved to Madison and loves exploring State Street, the UW Madison and downtown area. He also loves trying other Madison restaurants.

Chef Paul says, “Madison is so different from Chicago. I love that there are trees and parks everywhere.

The atmosphere is relaxed and friendly. That’s what I also enjoy about The Edgewater. Everyone here is so nice, and the location on Lake Mendota is beautiful.”
